What a terrible, rainy, windy day. What happened to you guys this week? Any fun, favorite things you want to share?
Here are my 5 Friday Fayevs:
- This amazing UGG lounge outfit – that I’m going to wear outside the house. I found this at my favorite TJMaxx last weekend. We curvy girls have a hard time finding shorts and generally we steer away from crop tops…BUT…I tried this on and it’s so flattering. The shorts are loose and not too short on me (thanks to being a whopping 5’1″) and the top must be worn with a tank underneath and that would extend below the crop so you’re not baring anything. I could see wearing this on Spring break (where did those days go?) or in the summertime. For a little while I pretended it was summer in the fitting room.
2. Who doesn’t need a few fairies in their life? My former inter, Sarah Jean Horowitz, has written a series – a whole series – called The Wingsnatchers. Carmer and Grit is only the first book in the series and I absolutely love it. I can’t wait to read the rest. If you enjoy fantasy fiction, pick it up.
3. Vero. Who knew this social media platform would take off 3 years after it’s creation. Sign-ups surged over the weekend and I got on the bandwagon a little late. It was so busy at one point I couldn’t even access the site to sign up. I’m still struggling trying to find people I know, so if you’re on there, connect with me! I promise I’ll post more. Right now I’m still trying to figure it all out.
4. New Mexican restaurant in East Greenwich. We were sad when Agave’s closed, but this is even better. Condesa was fabulous for a lunch on Monday holiday with my husband. We had v margarita’s and I had the enchilada’s which, for those of us who can’t decide between verde and mole, had both sauces on them.
5. A luxurious lobster pot pie for a special dinner. Both my husband and I adore lobster, so when I grocery shop, usually after work on a weeknight, and I see lobster on special, I will sometimes spoil us (and the cats) with a treat. This is great for a cold night – much like tonight. Here’s the recipe:
Ingredients:
1lb. lobster meat (approx. 4 lobsters)
1 cup frozen corn
1 cup frozen peas
2 carrots, diced
2 celery stalks, diced
1 onion
1-2 tablespoons all-purpose flour
1/2 cup lobster broth or veggie broth
1/2 cup heavy cream
1-2 tablespoons butter
salt & pepper
old bay seasoning
1/4 teaspoon turmeric
1 pie crust or bisquick biscuits
Instructions:
Preheat oven to 375 degrees
1. First boil the lobsters, clean and shell them and place the meat in a bowl
2. Saute the onions, carrots and celery in butter until softened
3. Rinse the corn and peas under warm water and add to the pan
4. Add the lobster broth (I used Better than Boullion lobster broth paste, you mix it with some water)
5. Add the lobster and then the heavy cream and a little of the flour, if needed to thicken the mix
6. Add seasonings to taste – taste the broth to be sure it’s to your liking!
7. At this point you can either pour the mixture into a pie pan or a baking dish and cover with a pre-made piecrust, brush the pie crust with butter and bake at 375 degrees about 20-30 minutes until the pie crust is cooked and golden OR
8. Make some Bisquick biscuits, but instead of adding water, add lobster stock
9. Par-bake the bisquits,
10. Pour the lobster mixture into a pie pan or baking dish
11. Top with the biscuits, brush them with butter and bake at 375 for 20 minutes until biscuits are fully cooked and golden
We made four mini baking dishes with the biscuits on top and froze two for another day. You can add potatoes, shrimp or scallops if you like.
